Vegetable Soup

IngrediŽnts Preparation

100 grams onion Look for the stock by the soups.
2 cloves of garlic Click for the meatballs the link left under this recipe.
2 tablespoons olive oil Make these two ingredients first.
1 liter stock of beef Wash the vegetables and scrape the carrots.
30 grams vermicelli or rice Cut the carrots, the beans and the celery in ropes.
3 tblsp. fresh herbs or Cut the cauliflower in little rose like pieces.
1 tblsp. dried herbs. Cut the onion and garlic in ropes.
40 grams carrots Sautť them  in the oil until translucent
40 grams French beans Pour  the stock in the pan with onion and garlic.
40 grams cauliflower Add all the vegetables at once.
40 grams celery root Add also the little meatballs and the vermicelli.
40 grams green peas Let it simmer for 30 - 45 minutes.
100 gr. small minced meat balls Cut the chives and the parsley.
1 tblsp. chives Add the parsley and chives at the last moment.
1 tblsp. parsley Taste the soup if it is salt enough.
That depends on the stock you have used.
