Mushroom ragout

IngrediŽnts Preparation

4 tblsp. olive-oil Heat the oil in a pan.
2 cutted, big shallots Fry the shallots and the garlic for 2 minutes in the oil.
4 cloves of garlic Add the smokes beef, cutted  in ropes.
50 grams of smoked beef Fry this also 2 minutes.
500 grams mushrooms Add the mushrooms and cook them for 5 minutes.
ľ liter chicken-stock Pour in the stock and the wine.
1Ĺ dl. white wine Put in the berries and the peppercorns.
8 bruised juniper-berries Lower the heat and simmer for 10 min. without the lid.
pepper to your taste Without the lid, the color keeps   better.
salt to your taste The liquid is now nearby diminished until half.
250 grams (goat)cheese Take the pan of the fire and crumble the cheese in it.
4 twigs of tarragon or If You use regular cheese, first grate the cheese.
1 tsp. tarragon powder At last add the fresh tarragon.
