Ingrediėnts Preparation

240 grams pastry flour Put the flour, sugar and salt in a bowl.
180 grams butter Cut the butter in small pieces with 2 knives.
120 grams sugar The pieces have then the size of peas.
1 tblsp. vanilla sugar Beat the egg with a spoon of water.
1 egg Keep 2 tablespoons apart.
2 grams salt Put the other part  in the flour.
4 ą 5 sour apples Knead a good coherent dough, with cool hands.
40 gram currants Otherwise: Use a solid fork.
40 gram raisins Break off 1/6 part of it and keep that paste apart.
50 gram sugar Roll the rest out, making a round piece.
20 gram flour Make the piece 2 cm. wider than the baking dish.
½ tsp. cinnamon-powder Do it careful in the baking dish.
½ tsp. all-spice-powder Press the paste  that not touches the bottom against
round baking dish (± Ų 23cm.) the walls of the baking dish.
Wash the currants and raisins careful with water.
Let them leak out very well.
Peel the apples, cut them in 4 pieces.
Take off the cores and cut them in slices.
Put them in the mould, on the dough. In the middle a little higher.
Mix the currants, raisins, sugar, flour, cinnamon and all spice.
Sprinkle this over the apple pieces.
Roll the paste, that you kept apart, out and make a round piece.
Cut this in ropes with a   width of 1 cm.
Twist the ropes over the apple-pie.
Put the ends over the edge and cover the edge with the last ropes.
Spread the ropes with the beaten egg and bake the pie for 1 to 1½ hour.
Bake in the middle of the oven on 150°Celsius or 300°Fahrenheit.
If you use a gas-oven, then stand 2½.
It is much work if you do this for the first time, but if you do it more often,
then it goes quicker and quicker.
